Hokkien Prawn Mee


 Ingredients:

  • 1 lb. dried Hokkien noodles
  • 1 lb. large prawns, peeled and deveined
  • 1/2 lb. pork belly, sliced
  • 4 cups chicken broth
  • 4 cups water
  • 2 tbsp. soy sauce
  • 2 tbsp. fish sauce
  • 2 tbsp. oyster sauce
  • 2 cloves of garlic, minced
  • 2 tbsp. oil
  • 2 cups bean sprouts
  • 2 cups chopped bok choy
  • 2 scallions, sliced
  • 2 red chili peppers, sliced (optional)
  • Lime wedges for garnish

Instructions:

  1. Cook the Hokkien noodles according to package instructions and set aside.
  2. In a large pot, bring the chicken broth, water, soy sauce, fish sauce, oyster sauce, and garlic to a boil.
  3. Add the pork belly and cook for 5-7 minutes or until cooked through.
  4. Add the prawns and cook until pink and cooked through.
  5. In a separate pan, heat the oil over medium heat. Sauté the bean sprouts, bok choy, scallions, and red chili peppers until softened.
  6. Divide the cooked noodles among bowls and ladle the broth, pork belly, and prawns on top of the noodles.
  7. Top with the sautéed vegetables and garnish with lime wedges.
