Ingredients:
- 1 lb. dried Hokkien noodles
- 1 lb. large prawns, peeled and deveined
- 1/2 lb. pork belly, sliced
- 4 cups chicken broth
- 4 cups water
- 2 tbsp. soy sauce
- 2 tbsp. fish sauce
- 2 tbsp. oyster sauce
- 2 cloves of garlic, minced
- 2 tbsp. oil
- 2 cups bean sprouts
- 2 cups chopped bok choy
- 2 scallions, sliced
- 2 red chili peppers, sliced (optional)
- Lime wedges for garnish
Instructions:
- Cook the Hokkien noodles according to package instructions and set aside.
- In a large pot, bring the chicken broth, water, soy sauce, fish sauce, oyster sauce, and garlic to a boil.
- Add the pork belly and cook for 5-7 minutes or until cooked through.
- Add the prawns and cook until pink and cooked through.
- In a separate pan, heat the oil over medium heat. Sauté the bean sprouts, bok choy, scallions, and red chili peppers until softened.
- Divide the cooked noodles among bowls and ladle the broth, pork belly, and prawns on top of the noodles.
- Top with the sautéed vegetables and garnish with lime wedges.
