Ingredients:
- 1 lb. rice noodles
- 2 cups chicken or shrimp broth
- 2 cups coconut milk
- 2 tbsp. red curry paste
- 1 tbsp. fish sauce
- 1 tsp. sugar
- 1 lb. shrimp, peeled and deveined
- 1 cup bean sprouts
- 1 cup shredded cabbage
- 1/2 cup chopped cilantro
- 1/4 cup chopped scallions
- 1 lime, cut into wedges
Instructions:
- Cook the rice noodles according to package instructions and set aside.
- In a large pot, bring the broth, coconut milk, curry paste, fish sauce, and sugar to a boil.
- Add the shrimp and cook until pink and cooked through.
- Add the bean sprouts and cabbage and cook for an additional 2 minutes.
- Remove from heat and stir in the cilantro and scallions.
- Serve the laksa in bowls over the cooked rice noodles.
- Garnish with lime wedges and additional cilantro and scallions if desired.
