LAKSA SINGAPURA


 Ingredients:

  • 1 lb. rice noodles
  • 2 cups chicken or shrimp broth
  • 2 cups coconut milk
  • 2 tbsp. red curry paste
  • 1 tbsp. fish sauce
  • 1 tsp. sugar
  • 1 lb. shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 1 cup shredded cabbage
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped scallions
  • 1 lime, cut into wedges

Instructions:

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a large pot, bring the broth, coconut milk, curry paste, fish sauce, and sugar to a boil.
  3. Add the shrimp and cook until pink and cooked through.
  4. Add the bean sprouts and cabbage and cook for an additional 2 minutes.
  5. Remove from heat and stir in the cilantro and scallions.
  6. Serve the laksa in bowls over the cooked rice noodles.
  7. Garnish with lime wedges and additional cilantro and scallions if desired.
  8. Enjoy!
