Kari Kepala Ikan


 Ingredients:

  • 1 lb. whole fish head (such as snapper or sea bass)
  • 2 tbsp. oil
  • 2 onions, chopped
  • 4 cloves of garlic, minced
  • 2 tbsp. tamarind paste
  • 1 tbsp. fish sauce
  • 2 tsp. sugar
  • 2 cups coconut milk
  • 2 cups water
  • 1 cup chopped tomatoes
  • 2 cups mixed vegetables (such as carrots, bell peppers, and green beans)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Clean the fish head and cut into large pieces. Season with salt and pepper.
  2. In a large pot or Dutch oven, heat the oil over medium heat. Add the onions and garlic and sauté until softened.
  3. Stir in the tamarind paste, fish sauce, sugar, coconut milk, water, and tomatoes. Bring to a boil.
  4. Add the fish head and mixed vegetables and reduce heat to low. Cover and simmer for 15-20 minutes or until the fish is cooked through and vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh cilantro and serve with rice.
