Ingredients:
- 1 lb. whole fish head (such as snapper or sea bass)
- 2 tbsp. oil
- 2 onions, chopped
- 4 cloves of garlic, minced
- 2 tbsp. tamarind paste
- 1 tbsp. fish sauce
- 2 tsp. sugar
- 2 cups coconut milk
- 2 cups water
- 1 cup chopped tomatoes
- 2 cups mixed vegetables (such as carrots, bell peppers, and green beans)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Clean the fish head and cut into large pieces. Season with salt and pepper.
- In a large pot or Dutch oven, heat the oil over medium heat. Add the onions and garlic and sauté until softened.
- Stir in the tamarind paste, fish sauce, sugar, coconut milk, water, and tomatoes. Bring to a boil.
- Add the fish head and mixed vegetables and reduce heat to low. Cover and simmer for 15-20 minutes or until the fish is cooked through and vegetables are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve with rice.
